Who else feels like dinners on weeknights are like a frantic race to the table? I really feel drained on Monday nights after work so I decided to give this Johnny Marzetti Casserole a try by making it up on Sunday and throwing it into the fridge to bake on Monday night. It was a hit except for the mushrooms, but hey the kids can work around them because I happen to like mushrooms! This was so easy to put together in fact I made a double batch and froze a meal for a later date (I know I am a genius Mom). The recipe Serves 4-6.
Brown a 1 lb of ground beef or turkey, drain off the fat. Add the sliced mushrooms (other ideas, onions, red peppers, zucchini, spinach) and saute for 2-3 minutes. Boil 1/2 pound elbow macaroni to al dente, rinse and drain. Mix elbow mac, meat and mushrooms with one can of tomato soup, one can of petite diced tomatoes (14.5 oz) and one jar of your favorite spaghetti sauce. Dump mixture into a square baking dish and top with cheddar cheese. Bake at 350 uncovered until hot and bubbly. Makes a great freezer meal and a make up ahead meal for Manic Mondays. Enjoy!
