This is a fun and easy one! Kids can totally help with a pizza wheel or a butter knife to cut the gnocchi strips into pieces. Serve with your favorite tomato sauce or alfredo sauce or both! I usually make a large pot of homemade tomato sauce and meatballs and freeze them in containers to thaw for later use and I also always keep a jar of sauce in the pantry. This is a meal that is fun to make together and easy on the budget!
- 1 1/2 cups prepared instant mashed potatoes, cooled
- 1 egg
- 1/4 teaspoon salt
- 1 1/2-2 cups all-purpose flour
Mix all together. Flour your cutting board, roll dough into strips, cut into bite size pieces. Boil water, put gnocchi into boiling water. When gnocchi rise to the top of the water they are done. Strain and rinse with cool water. Serve with your favorite tomato sauce! Great sides for this meal are garlic bread and salad.
