Sometimes you find a recipe and you want to change it up a bit, know what I mean? So the original recipe called for Turkey but I used chicken for my version.
Recipe (from my recipes online)
1 TBS canola oil
2 cups diced yellow onion
1.5 TBS chili powder
1 TBS minced garlic
1.5 TB cumin
1 tsp oregano
3 cans Great Northern Beans, rinsed and drained
4 cups fat free low sodium chicken broth
3 cups chopped turkey (Val’s twist: CHICKEN!!!)
1/2 cup diced seeded plum tomato
1/3 cup chopped fresh cilantro
2 TBS fresh lime juice
1/2 tsp salt
1/2 tsp fresh ground black pepper
Step 1: Heat oil in a large Dutch Oven over medium high heat. Cook chicken or turkey and remove to plate. Add onions and aute’ until tender and golden. Add chili powder, garlic and cumin and saute’ for 2 minutes. Add oregano and beans, cook 30 seconds. Add broth, bring to a simmer. Simmer 20 minutes.
Step 2: Smash bean mixture with masher or use a food processor. Add chopped turkey or chicken to mixture and cook for 5 minutes until heated thoroughly. Remove from heat. Add diced tomato, cilantro, lime juice, salt and pepper. Stir well and serve!
