Little Joe likes a lot of foods but one thing he loves to sample at Italian restaurants is Gnocchi. Gnocchi are a potato dumplings and in fact my Gramma used to make them. Unfortunately I did not have her recipe but I was lucky enough to find a very simple recipe in a Pampered Chef cookbook. Little Joe was very excited to try making gnocchi himself!
The ingredients are very basic and I let Little Joe due the measuring this time since he is doing amazing in Math this year. One ingredient that he would not touch was the EGG! Little Joe thinks eggs are slimy and gross. So I cracked the egg into the bowl for him. Now time to mix! Where’s the spoon Little Joe asked? LOL so sorry you have to use your hands and touch the egg! After slightly mixing the ingredients we let the dough rest, then roll onto a floured cutting board. Now to shape the gnocchi! We used a pizza wheel to cut the dumplings. I would have loved to have learned how to shape the dumplings with my hands like my Gramma. My Gramma had this technique where she would pull the dough away with her thumb and roll across the board to make the perfect gnocchi. Little Joe loved rolling the pizza wheel through the dough! Next I put the gnocchi into a boiling pot of water and much like ravioli you just wait for the gnocchi to float to the top and then remove. I like to drizzle olive oil over the finished gnocchi so they do not stick to each other before serving. Now for the taste test….yum…use your favorite sauce. Little Joe has a few favorite sauces to recommend… his Aunt Rosie’s sauce, his Mommy’s sauce, Carfagna’s jar sauce found at Giant Eagle or Alfredo sauce. Enjoy!

Homemade Gnocchi-Pampered Chef Season’s Best Spring/Summer 2006
1 1/2 cups prepared instant mashed potatoes, cooled
1/4 teaspoon salt
1 1/2-2 cups flour
